No-Bake Strawberry Cheesecake Cups

Individual no-bake cheesecake cups layered with a buttery crumb base and fresh strawberry topping.

When it's too hot to turn on the oven, these no-bake cheesecake cups are the answer. They look impressive in individual glasses but take almost no real effort — the hardest part is waiting for them to chill.

Ingredients

Cheesecake Filling

  • 80 g powdered sugar
  • 200 g fresh strawberries, chopped
  • 1 tsp vanilla extract
  • 200 ml heavy cream, whipped
  • 250 g cream cheese, softened

Crumb Base

  • 150 g digestive biscuits or graham crackers, crushed
  • 60 g unsalted butter, melted

Instructions

    Mix the crushed biscuits with melted butter and press into the bottom of 6 glasses or jars.

    Beat the cream cheese with powdered sugar and vanilla until smooth.

    Fold in the whipped cream until fully combined and fluffy.

    Spoon the cheesecake filling over the crumb base in each glass.

    Top with chopped fresh strawberries and chill for at least 2 hours before serving.

Tips

Let the cups chill for at least 2 hours so the filling fully sets before serving.
